White tea is exclusive to China and is grown and harvested using a light oxidation process. It comes from the Fujian province and is made using the younger leaves of the Camellia sinensis plant. The buds and leaves found on this plant wither in the natural sunlight prior to the minimal processing that prevents further oxidation and fermentation. It’s this process that retains the light, fruity flavor of white tea. It also has a whitish appearance, as the buds of the tea plant are white in color.

The history of white tea is a bit complicated, as there are different theories for how it was first discovered and used. What we do know is that white tea has come into creation in the past two centuries, much after the creation of black and green teas. 

The manufacturing process is relatively simple and includes taking a fresh tea leaf, withering it and drying it using air, mechanical or solar drying processes. Although a simple method, the materials used in white tea are scarce, making high-quality teas difficult to produce. This makes white tea a bit more expensive than other selections.

Since white tea is made from the same leaves as other teas, it has similar health benefits as black, green and oolong varieties. Anti-inflammatory properties, cancer-fighting agents and a reduction in heart disease are amongst some of the health benefits. The level of polyphenols varies between the different varieties of white tea leaves, with most rivaling the health benefits of green tea. 

More specifically, the catechins, or polyphenol antioxidants, found in white tea have been found to lower blood pressure, reduce bad cholesterol and improve the function of blood vessels. With these benefits, white tea is especially helpful in reducing the risk of heart disease and can even improve the health by rebuilding the arteries. 

White tea is known for its characteristic light and sweet flavors, as well as less caffeine that makes it a preferred choice for afternoon tea. There are many selections that include white peony, golden moon, silver needle and white cloud.
